Fruity HP Sauce

HP Sauce can be made with Easy Worcestershire Sauce. This version is sweeter and more like a Fruity HP Sauce.

This recipe is a simplified version of Authentic Homemade HP Brown Sauce. Since I haven’t eaten commercial HP Sauce in many years, I can’t offer an opinion on if this sauce tastes like the original.

This recipe is safe for someone on the Specific Carbohydrate Diet, GAPS or modified paleo diet.

1c boiling water
14 dried garden Roma tomatoes
8 organic Medjool dates, pitted
10 organic dried prunes
1/4c-1/2c tamarind paste
2T organic extra virgin olive oil
3 organic onions, chopped
5 organic apples, chopped
3 organic garlic cloves, minced
1/4c-1/2c reserved fruit water
1/2tsp of each freshly ground: organic cloves, black peppercorn, cardamon, brown mustard seed, cinnamon, and allspice
1/4c organic blackstrap molasses
1/2c-3/4c organic cider vinegar
1/4c-1/2c Red Boat fish sauce
1/4c-1/2c Easy Worcestershire Sauce
Put the dried tomatoes, dates, prunes and tamarind paste in a bowl. Pour the boiling water over the fruit and cover. Let cool for about 20-30 minutes. Reserve the fruit water for later use.

In a large sauce pan saut? the onions in the olive oil until translucent. Add the apples and garlic and simmer for 20 minutes until apples are very soft. If needed, add some of the reserved fruit water to avoid sticking. Remove from heat and add the freshly ground spices and stir well.

In a Vita-mix machine puree the soaked dried fruit. Add the cooked apple mixture and blend until very smooth. Add the molasses and half of the vinegar, fish sauce and Worcestershire sauce. Mix very well. Add an extra 1/4c tamarind, 1/4c cider vinegar, 1/4c fish sauce and 1/4c Easy Worcestershire Sauce if you want a less sweet, darker, and thicker sauce. This recipe makes about 2L of sauce. You can add the extra ingredients to one of the liters and see which sauce you like better — sweet or savory.

Adjust the tamarind, cider vinegar, fish sauce and Easy Worcestershire Sauce to taste. It’s hard to see in the photo, but this HP Sauce is darker and thicker.
