Fireweed Birthday: Independence Day!

Fireweed — according to Wild Rose College of Natural Healing“removes anger and transmutes karma. It is the remedy of restoration. When life destroys us, Fireweed flower essence helps us to successfully start over.”

I need a bit of THAT right now considering my government is making “everything I want to do illegal”. Pretty soon, the only way we will be allowed to share food is through pictures on the internet!

This week, I made a Chocolate Brownie with Chocolate Butter Icing. The fruit sauce was made from the last bag of frozen sour cherries from our garden. On the side is whipping cream and Fireweed flowers. My goal is to rise like the Phoenix this year. The cake — of course — has no grains. I have finally made a breakthrough with icing. Making icing with honey has not gone well in the past. Here is the new recipe. Success at last!

Chocolate Butter Icing
1/2c organic butter
1-2T local raw honey
3T organic cocoa
1tsp organic vanilla extract or 1tsp crushed vanilla beans
1 pastured egg yolk
In a food processor cream the butter and honey. Add the cocoa and vanilla extract and mix well. (I used the vanilla beans after making vanilla extract by crushing the vanilla beans into a paste.) Add the egg yolk and mix well again. Make sure the cake is completely cooled before icing. Let the icing completely cool before eating.
