Ketogenic Chocolate Fudge

Ketogenic Chocolate Fudge is unlike any fudge you have ever eaten.

This recipe originally came from Eat Fat, Loss Fat by Dr Mary Enig and Sally Fallon Morell. I have made a few changes to the recipe to make it ketogenic.

This is like no fudge you have ever eaten. Normally, fudge is a super sweet dessert loaded with sugar. In contrast, this fudge is loaded with healthy fats.

1 1/4c organic coconut oil
1/4c organic creamed coconut
3-4T organic butter
5-6T organic cocoa powder
1-2T local honey
2 big pinches of sea salt
1T homemade vanilla extract (optional)
1c organic pecans, finely ground

Put the coconut oil, creamed coconut and butter into a Pyrex measuring cup. Place the measuring cup in a sauce pan half filled with water. Bring the water to a boil and simmer the mixture until melted.

In a food processor or Vitamix machine, add the melted coconut mixture, cocoa powder, honey, salt and vanilla extract. Blend very well. Add the nuts and blend until smooth. Pour the mixture into a 8″x8″ glass pan lined with wax paper.

Cool the fudge in the freezer until the it is almost solid. Remove the fudge and cut into 32 bars. If you get the cooling at the right point, the fudge cuts cleanly and easily.

Store in the freezer. Enjoy the fudge when you need a quick snack that will fuel your body for hours.

Melt the coconut oil, creamed coconut and butter in a Pyrex cup.

Pour the fudge into a glass pan lined with wax paper. Cool in the freezer.

Use the wax paper to remove the hardened fudge from the pan. It’s easier to cut on the counter. I should have given the fudge a bit more time to cool because the fudge didn’t cut smoothly.

Sesame Flax Crackers

Creamy, crunchy crackers! Mmmmm! Progress happens more by mistake than intention.

These crackers can be made in a food processor but a Vitamix machine will give a very creamy cracker that can support loads of butter, cheese or pate without falling apart. I made these crackers by accident by putting the Vitamix machine on high for a moment. I thought I had ruined the crackers but they turned out creamy and crunchy. Progress in my kitchen happens more often by mistake than intention.

2c organic sesame seeds
1/2c organic brown or yellow flax seeds
3c filtered water
2tsp sea salt
1 organic bird’s eye pepper (optional)

Soak the sesame and flax seeds overnight in the water and salt. In the morning, the mixture will have mostly congealed. In a Vitamix machine, grind the mixture at high speed for just a moment. The mixture should be quick thick.

With a tablespoon, scoop out some of the mixture and place it on the dehydrator sheet. Smooth down into rounded crackers or just let the crackers settle themselves. Don’t spread the mixture too thinly or the crackers will break. Dehydrate at a low temperature for 24 hours or until the crackers are dry. Store in a dark, dry place.

Vanilla Coconut Pudding

Coconut pudding is a quick and easy dessert filled with healthy fats.

This recipe originally came from Eat Fat, Lose Fat: The Healthy Alternative to Trans Fats by Dr Mary Enig and Sally Fallon Morell. The addition of homemade vanilla extract and vanilla seeds gives this pudding a delicate flavor.

2c hot water and 1c cold water
1c dried organic coconut flakes
big pinch of sea salt
1/4c organic creamed coconut
2T homemade vanilla extract
2-4T organic coconut oil
1T local honey
1tsp organic cinnamon, sprinkled (optional)
vanilla bean seeds (optional)

Bring the 2c waters to a boil. Add the coconut flakes and sea salt. Simmer for 10-15 minutes. At the end of the cooking, melt in creamed coconut. Remove from heat and transfer to a Vitamix machine or food processor. Add the vanilla extract, coconut oil and honey. Blend until the mixture is very smooth. Add the 1c of cold water and blend again. Pour the mixture into a glass bowl. The homemade vanilla extract and vanilla seeds gives the pudding a very delicate favor. Top the pudding with a sprinkle of cinnamon if desired, but I like the pudding best with just vanilla bean seeds.

Let the pudding cool overnight in the fridge. The pudding may separate into a hard top and a liquid bottom. This separation doesn’t happen when using the Vitamix machine. If the pudding does separates using a food processor, just stir before serving. The pudding can also be eaten warm for breakfast or quick snack.

If you look carefully you can see the tiny vanilla bean seeds in the coconut pudding. Delicious!

The book could be summarized as: feast one day, fast the next day, then repeat. (Without the marketing hype, the summary would be: eat normally one day, do a modified 500 calorie fast the next day, then repeat.) If this approach works for you, read no further. A person’s carb-tolerance is primarily influenced by three factors: age, activity level and gender and to a lesser extent endocrine health and medications. So, a twenty-something, active male can safely consume more carbohydrates than a menopausal, sedentary woman. If you are overweight or obese and have metabolic syndrome or type 2 diabetes, you are by definition carb-intolerant. People that are carb-intolerant will benefit from a low-carb or ketogenic diet. Personally, I got interested in ketogenic diets because the diet was a traditional treatment for epilepsy. I used to have epilepsy among other chronic conditions. Doing a low-carb version of the Specific Carbohydrate Diet cured my epilepsy along with asthma, allergies, chronic sinus infections, migraine headaches, yeast infections and osteoarthritis.* Because of my own personal success, I have been following the research and experimenting with low-carb and ketogenic diets for some time.

Until recently, it has been very hard to get good information on a whole food, ketogenic diet. Jimmy Moore has just put out a book called Keto Clarity: Your Definitive Guide to the Benefits of a Low-carb, High-fat Diet. Just in case your are wondering if this is just some new fad diet, Jimmy Moore will introduce you to 22 experts on ketogenic diets and their research.

Jimmy Moore states that the biggest mistake people make with ketogenic diets is eating too many carbohydrates. The second biggest mistake is eating too much protein. A ketogenic diet is a very high-fat, low-carb and just-enough-protein diet. The book will explain:

  1. The science of ketosis and why it has health giving benefits and to test to know you’re in ketosis.
  2. How to find your personal carb-tolerance and protein-tolerance.
  3. How to free yourself of the habit and need to eat three or more meals a day and how to manage societal pressures surrounding food.
  4. Why people on a ketogenic diet need more salt and why consuming more salt isn’t a health problem.
  5. How to use a ketogenic diet and intermitted fasting for fast, hunger-free weight loss.

This book is a detailed look at ketogenic diets. Section 3 has information suitable for a medical professional. Dr Volek explains the “natriuresis of fasting” and why ketogenic dieters need more salt. Just take a pass on the bouillon cubes and make some bone broth.

If you are looking for a more how to approach to low-carb eating, The New Atkins for a New You is an excellent whole food primer. This book will introduce you to your “metabolic bully” and help you get this bully out of your life. It’s safer to just pass on the industrial vegetable oils and artificial sweeteners suggested in the book. Small amounts of honey or stevia would be a better choice than artificial sweeteners. After a few months of low-carb eating, your sense of what is sweet will naturally be dialed down to a healthier level. I would also suggest avoiding the Atkins brand of prepared foods and find ways to prepare these foods at home. Also, take a pass on the commercial bouillon cubes and industrial thickeners and make some bone broth and Onion Gravy. This is especially important for followers of the Specific Carbohydrate Diet or GAPS which must avoid common food additives.

This book is an excellent “how to” approach to low-carb eating. Just ditch the industrial vegetable oils, artificial sweeteners, bouillon cubes and the Atkins brand of prepared foods. Other then that, it’s a great book.

One thing I have learned about low-carb and ketogenic diets over the years, is that it’s easy to eat your fill of salad or greens and still be low-carb or even ketogenic. For example, you could consume 12 cups of romaine lettuce a day and still be under 20gm of total carbohydrate. Or you could eat 4 cups of cauliflower and be under 20gm of total carbohydrate. That’s a lot of salad or greens. The trick is to save all your carbohydrates for salad and greens and not to waste them on starchy vegetables, fruit or simple sugars.

Fiber is also very important because many people find low-carb or ketogenic diets constipating. When you cut out the grains, legumes, beans, starchy vegetables and fruit there’s not much fiber left in the diet. Consuming large amounts of salad and greens will help fill you up and supply essential vitamins, minerals and phytochemicals.

Salad and greens also provides fiber. Fiber comes in two forms: insoluble and soluble. Insoluble fiber just passes through the body. Soluble fiber can be consumed by our gut flora. The gut flora thrives on the carbohydrates in the fiber.** The gut flora also produces short and medium chain fatty acids from the fiber but cannot consume these fatty acids in the anaerobic environment of the bowel. These fatty acids are reabsorbed in the large intestine and used by our body. These special fatty acids are being researched for their health promoting qualities. The fantastic part of this process is that eating soluble fiber from greens is like eating high-fat, after digestion… And you get these very special fatty acids produced just for you by your gut flora!

So, eat your salad and greens.?Know that your friendly gut flora with convert these carbohydrates into health promoting fatty acids… after digestion!

Contrary to popular belief, it is possible to be ketogenic and eat your fill of salad or greens. This meal is ketogenic. It’s very high-fat, low-carb, and just-enough-protein. The trick is to save your carbohydrates for a plate full of salad and greens and take a pass on the starchy vegetables, fruit, or simple sugars. Just remember to enjoy your salt and bone broth!

*Please note: I was on a very low-carb, not a ketogenic diet when I cured my epilepsy. I was on a very low-carbohydrate diet (40-60gm) but I didn’t have a way to test if I was actually in ketosis.

Updated March 13, 2015: Here’s another example of an extreme athletic event using a ketogenic diet. Sami Inkinen and Meredith Loring rowed 2800 miles from Monterey, California, to Honolulu, Hawaii in 45 days. The couple became the fastest pair to accomplish this crossing. They completed this row on a whole food, very high fat diet. Dr Stephen Phinney the author of The New Atkins for a New You was the pair?s nutritional adviser. The couple did the row to raise funds for childhood diabetes and publicize the dangers of eating sugar.

Crunchy Cacoa Candy

Here’s a way to enjoy chocolate without having the added sugar or additives. One or two pieces of Crunchy Cocoa Candy is a very filling snack or dessert. Watch out, it’s very stimulating!

This recipe is NOT safe for someone on the Specific Carbohydrate Diet. This recipe is good for a ketogenic fast.

Many people love chocolate but are trying to find healthier ways to consume it. Let’s Do… Organic creamed coconut has a gritty texture for a coconut cream, but this texture just adds to the pleasant crunchiness of the cacao nibs.?

200g Let’s Do… Organic creamed coconut or other creamed coconut
1-2T organic coconut oil
1-2T local raw honey (optional)
1/4c organic cacao nibs
2-3 large pinches sea salt
Prepare a tray with a layer of wax paper. Heat water in a sauce pan big enough to accommodate a 2c Pyrex measuring cup. Put the creamed coconut and coconut oil into the measuring cup and gently warm until melted. Remove from heat and add the honey, cocoa nibs and sea salt. Mix very well. (I like grinding the sea salt with a bird’s eye pepper and using few large pinches of the spicy sea salt to flavor the cocoa nibs.) Line a 8″x8″ glass baking tray with wax paper. Pour the mixture onto the wax paper and spread until fairly thin. Cool in the freezer for 10-15 minutes. Remove the partly cooled candy and cut into 32 pieces.

One or two pieces of candy is very stimulating and would be best consumed in the morning. Cacao nibs contain theobromine which is a nervous system stimulant similar to caffeine.

In a 2c Pyrex measuring cup melt the coconut cream and coconut oil. Stir frequently.

Pour the candy into the 8″x8″ glass baking tray and cool in the freezer for 10-15 minutes.

After the candy cools but before it gets too hard, cut the candy into 32 pieces. If you wait too long, the candy will get too hard and will crack like the two pieces in the front.
